Mix the honey, minced garlic, soy sauce, chicken broth, salt, and black pepper in a bowl until combined.
Place the pork tenderloin in the slow cooker. Arrange the carrot chunks around it.
Pour the honey garlic mixture over the pork and carrots. Drizzle the olive oil on top.
Cover and cook on low for 6 to 8 hours until the pork reaches an internal temperature of 145°F and the carrots are soft.
Remove the pork, let it rest for 5 minutes, then slice and serve with the carrots and sauce from the pot.
