Place the beef stew meat in the bottom of the slow cooker.
Add the sliced bell peppers, diced onion, and minced garlic on top of the beef.
Sprinkle the Hungarian paprika, caraway seeds, salt, and black pepper over the ingredients.
Pour in the beef broth and the can of diced tomatoes, including the juice.
Stir everything gently to combine the seasonings with the liquid.
Cover the slow cooker and cook on low for 8 hours until the beef is tender.
Ladle the stew into bowls and top each serving with a spoonful of sour cream.
