Italian Hamburger Stew with Ditalini
Course Soup
Cuisine Italian
Servings 4 people

Equipment

  • Large Pot
  • Wooden Spoon
  • Can Opener

Ingredients

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 ounces) diced tomatoes
  • 1 can (8 ounces) tomato sauce
  • 4 cups beef broth
  • 1 cup ditalini pasta
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese, for serving

Instructions

  • Brown the ground beef in a large pot over medium heat. Break it up with a spoon until no pink remains. Drain excess fat if needed.
  • Add the diced onion and minced garlic to the pot. Cook for 3 minutes until the onion softens.
  • Stir in the diced tomatoes, tomato sauce, beef broth, oregano, basil, salt, and pepper. Bring the mixture to a boil.
  • Add the ditalini pasta. Reduce heat to low and simmer for 12 minutes, stirring occasionally, until the pasta is tender.
  • Ladle the stew into bowls and top each serving with grated Parmesan cheese.

Notes

Simmer the stew a few extra minutes if you prefer a thicker broth, since the pasta continues to absorb liquid as it sits. Leftovers reheat well on the stove with a splash of broth to loosen the texture. Skip the Parmesan if you need a dairy-free version.
