Italian Herb Hamburger Stew with Tomatoes and Pasta
Course Main Course
Cuisine Italian
Large Pot
Wooden Spoon
Knife
- 1 pound ground beef
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 4 cups beef broth
- 2 teaspoons Italian seasoning
- 8 ounces small pasta, such as elbows
- Salt and black pepper to taste
- Grated Parmesan for serving
Heat a large pot over medium heat. Add the ground beef, onion, and garlic. Cook until the beef is browned and the onion softens, breaking up the meat as it cooks.
Stir in the Italian seasoning, then add the diced tomatoes and beef broth. Bring the mixture to a simmer.
Add the pasta and cook for 10 to 12 minutes, stirring occasionally, until the pasta is tender.
Taste and season with salt and black pepper as needed. Ladle into bowls and top with grated Parmesan before serving.
Cook the pasta just until tender to keep it from absorbing too much broth during storage. Leftovers reheat well on the stove with a splash of broth to loosen the texture. If you want a thicker stew, let it simmer uncovered for a few extra minutes after the pasta finishes cooking.
