Italian Herb Tomato Hamburger Stew
Course Main Course
Cuisine Italian
- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cans (14.5 ounces each) diced tomatoes
- 2 cups beef broth
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Brown the ground beef in a skillet over medium heat, breaking it up as it cooks. Add the onion and garlic during the last few minutes until the onion softens.
Transfer the beef mixture to the slow cooker. Pour in the diced tomatoes and beef broth.
Add the carrots, celery, Italian seasoning, salt, and black pepper. Stir to combine everything evenly.
Cover and cook on low for 7 to 8 hours until the vegetables are tender and the flavors have blended.
Brown the beef first to deepen the savory taste before the long simmer. If the stew seems too thick at the end, stir in a splash of extra broth. Leftovers keep well in the fridge for up to three days and reheat easily on the stovetop.
