Italian Sausage, Pepper, and Tomato Stew

Ingredients
  

  • 4 Italian sausages, sliced into 1 inch pieces
  • 3 bell peppers (mixed red and green), sliced
  • 1 large onion, sliced
  • 4 garlic cloves, minced
  • 1 can (28 oz) crushed tomatoes
  • 1/2 cup chicken broth
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Place the sliced sausage into a skillet over medium heat. Cook for 5 minutes, turning once, until lightly browned on the edges.
  • Add the browned sausage to the slow cooker along with the sliced peppers, onion, and minced garlic.
  • Pour the crushed tomatoes and chicken broth over the mixture.
  • Sprinkle in the Italian seasoning, salt, and black pepper. Stir gently to combine.
  • Cover and cook on low for 6 to 7 hours until the peppers are soft and the sausage is cooked through.
  • Stir once more before serving.

Notes

Slice the peppers into similar widths so they cook evenly without turning mushy. Leftovers reheat well the next day and the flavors deepen slightly in the fridge. If the stew seems too thick at the end, add a splash of broth before serving.
