Jack-o'-Lantern Stuffed Jalapeño Poppers
Course Appetizer
Cuisine American
Servings 4 people

Equipment

  • Baking sheet
  • mixing bowl
  • small knife
  • parchment paper

Ingredients

  • 8 large jalapeño peppers
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon bits
  • 1/4 cup chopped green onions
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste

Instructions

  • Preheat the oven to 400°F and line a baking sheet with parchment paper.
  • Use a small knife to carve simple jack-o'-lantern faces on one side of each jalapeño pepper. Slice off the tops, remove the seeds and membranes, and set the peppers aside.
  • In a mixing bowl, stir together the cream cheese, cheddar cheese, bacon bits, green onions, smoked paprika, salt, and black pepper until the mixture is smooth and evenly combined.
  • Spoon the filling into each carved pepper until it is full but not overflowing.
  • Arrange the stuffed peppers on the prepared baking sheet with the faces facing up.
  • Bake for 15 to 20 minutes until the filling is hot and slightly browned on top and the peppers have softened.

Notes

Wear gloves while carving and seeding the jalapeños to avoid skin irritation from the peppers. You can carve and stuff the peppers a few hours ahead, then bake them right before guests arrive so the filling stays creamy. If the bacon bits are very salty, taste the filling before adding extra salt.
