Key Lime Coconut Cream Pie Bars

Ingredients
  

  • 3/4 cup graham cracker crumbs
  • 1/4 cup unsweetened shredded coconut
  • 3 tablespoons unsalted butter, melted
  • 1/2 cup sweetened condensed milk
  • 1/4 cup key lime juice
  • 1/4 cup coconut cream
  • 1/2 cup heavy cream
  • 1 tablespoon powdered sugar
  • 2 tablespoons toasted coconut flakes
  • Zest of 2 key limes

Instructions
 

  • Preheat the oven to 350 degrees. Stir together the graham cracker crumbs, shredded coconut, and melted butter until the mixture holds together when pressed.
  • Press the crust mixture firmly into the bottom of an 8x8 baking pan. Bake for 10 minutes, then let it cool completely.
  • Whisk the sweetened condensed milk, key lime juice, and coconut cream in a bowl until smooth. Pour this filling over the cooled crust.
  • Chill the pan in the refrigerator for at least 4 hours until the filling is firm.
  • Whip the heavy cream with the powdered sugar until soft peaks form. Spread the whipped cream over the chilled filling.
  • Sprinkle the toasted coconut flakes and key lime zest evenly across the top before slicing into bars.

Notes

Chill the bars overnight for the cleanest cuts. Toast the coconut flakes in a dry skillet over medium heat for two minutes to deepen their flavor without burning. If the filling seems too tart after mixing, add one extra tablespoon of condensed milk before pouring it over the crust.
