Blender

Fine mesh strainer
- 4 ripe kiwis, peeled and chopped
- 1 large cucumber, peeled and chopped
- 1/4 cup fresh mint leaves
- Juice of 2 limes
- 2 tablespoons agave syrup
- 4 cups cold sparkling water
- Ice cubes
- Kiwi slices and thin cucumber ribbons for garnish
Add the chopped kiwis and cucumber to a blender. Blend until the mixture becomes a smooth puree.
Pour the puree through a fine mesh strainer into a pitcher to remove pulp if you prefer a clearer drink. Press with a spoon to extract as much liquid as possible.
Stir the mint leaves, lime juice, and agave syrup into the strained liquid until the agave dissolves.
Slowly add the cold sparkling water to the pitcher and stir gently to combine without losing too much fizz.
Fill four glasses with ice cubes. Pour the punch over the ice and garnish each glass with a kiwi slice and a cucumber ribbon.
Make the base puree up to a day ahead and store it in the refrigerator, then add the sparkling water right before serving so it stays bubbly. If the drink tastes too tart, add a little more agave one teaspoon at a time. For a stronger mint note, muddle a few extra leaves in the bottom of each glass before pouring.
