Lean Beef and Broccoli Bowl with Brown Rice

Ingredients
  

  • 1 pound lean sirloin steak, thinly sliced
  • 4 cups broccoli florets
  • 1 cup uncooked brown rice
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon grated fresh ginger
  • ½ cup water
  • 2 green onions, sliced
  • 1 teaspoon sesame seeds

Instructions
 

  • Cook the brown rice according to package directions and set it aside.
  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the sliced beef and cook for 3 to 4 minutes until browned but still tender. Remove the beef to a plate.
  • Add the garlic and ginger to the same skillet and stir for 30 seconds.
  • Add the broccoli florets and water. Cover and steam for 3 minutes until the broccoli is bright green and crisp-tender.
  • Return the beef to the skillet. Stir in the soy sauce and cook for 1 minute to combine.
  • Divide the cooked brown rice among four bowls. Top each bowl with the beef and broccoli mixture.
  • Sprinkle the green onions and sesame seeds over each serving.

Notes

Steam the broccoli just until it turns bright green so it stays crisp against the tender beef. If the mixture seems dry after adding the soy sauce, splash in an extra tablespoon of water. Leftovers reheat well in a covered skillet over low heat with a splash of water to loosen the sauce.
