Heat the vegetable oil in a large pot over medium heat. Add the pork pieces and brown them on all sides for about 6 minutes. Season with salt and pepper during this step.
Add the chopped onion and minced garlic to the pot. Cook for 3 minutes until the onion softens.
Stir in the maple syrup, Dijon mustard, dried thyme, and bay leaves. Pour in the chicken broth and bring the mixture to a simmer.
Cover the pot and let it cook on low heat for 45 minutes to tenderize the pork.
Add the cubed potatoes and sliced carrots. Continue simmering uncovered for 25 minutes until the vegetables are fork-tender.
Remove the bay leaves. Taste and adjust salt and pepper if needed before serving.
