Heat the olive oil in a large pot over medium heat. Add the onion and cook for 4 minutes until it softens.
Stir in the garlic and cook for 1 minute until fragrant.
Pour in the white wine and let it simmer for 3 minutes to reduce slightly.
Add the diced tomatoes, fish stock, artichoke hearts, oregano, salt, and pepper. Bring the mixture to a gentle boil.
Lower the heat and simmer uncovered for 10 minutes so the flavors meld.
Add the swordfish chunks to the pot. Cover and cook for 6 to 8 minutes until the fish turns opaque and flakes easily.
Remove the pot from the heat and stir in the parsley before serving.
