Heat the olive oil in a large Dutch oven over medium-high heat. Add the lamb pieces and brown on all sides for about 6 minutes. Remove the lamb to a plate and set aside.
Add the diced onion to the same pot and cook for 4 minutes until it starts to soften. Stir in the minced garlic and cook for 1 minute more.
Return the lamb to the pot. Add the chopped chipotle peppers, cumin, and oregano. Stir for 1 minute to coat the meat.
Pour in the diced tomatoes and beef broth. Bring the mixture to a simmer, then reduce heat to low. Cover and cook for 45 minutes.
Stir in the black beans and corn. Continue simmering uncovered for 20 minutes until the lamb is tender and the stew has thickened slightly.
Taste and season with salt and black pepper. Ladle into bowls and top with chopped cilantro and a squeeze of lime.
