- 8 ounces gin
- 1 cup pomegranate juice
- 1/2 cup pomegranate arils, plus extra for garnish
- Juice of 4 lemons
- 1/4 cup simple syrup
- 20 fresh mint leaves, plus 4 sprigs for garnish
- Crushed ice
Place the mint leaves and 1/2 cup pomegranate arils in a cocktail shaker. Gently muddle them to release the mint oils and break down a few arils.
Add the gin, pomegranate juice, lemon juice, and simple syrup to the shaker.
Fill the shaker with crushed ice, secure the lid, and shake vigorously for 15 seconds until well chilled.
Divide the remaining crushed ice among four glasses. Strain the mixture evenly into each glass.
Top each drink with a few extra pomegranate arils and a mint sprig.
Muddle the mint just enough to bruise the leaves without turning them bitter. If the drink tastes too tart, add a splash more simple syrup before shaking. Prepare the lemon juice and simple syrup ahead so assembly stays quick at serving time. Skip the shaker and build the drink directly in the glass if you prefer less dilution.
