Servings 4 people

Equipment

  • Pitcher
  • Muddler
  • Glasses

Ingredients

  • 24 fresh mint leaves, plus 4 sprigs for garnish
  • 4 limes, juiced
  • 1/4 cup granulated sugar
  • 4 cups club soda, chilled
  • 2 cups crushed ice
  • 4 lime wedges for garnish

Instructions

  • Place the mint leaves and sugar in a sturdy pitcher. Use a muddler to press the leaves gently until the sugar dissolves and the mint releases its aroma.
  • Pour the lime juice into the pitcher and stir to combine the mixture evenly.
  • Add the crushed ice to the pitcher, then slowly pour in the club soda.
  • Stir once or twice to blend the ingredients without losing too many bubbles.
  • Divide the drink among four glasses, making sure each one gets a good amount of ice and mint.
  • Add one mint sprig and one lime wedge to each glass before serving.

Notes

Muddle the mint just until fragrant to avoid a bitter taste. Prepare the base of mint, sugar, and lime juice up to two hours ahead and keep it in the fridge, then add the club soda and ice right before guests arrive. Swap the granulated sugar for simple syrup if you prefer a smoother dissolve.
