Monster Eyeball Caprese Skewers
Course Appetizer
Cuisine Italian
Wooden skewers
Small knife
Serving platter
- 12 cherry tomatoes
- 12 small fresh mozzarella balls
- 12 fresh basil leaves
- 6 black olives, pitted and sliced in half
- 2 tablespoons olive oil
- 1 tablespoon balsamic glaze
- Salt and pepper to taste
- 12 wooden skewers
Thread one cherry tomato onto each wooden skewer, pushing it near the top.
Add one basil leaf next to the tomato on the skewer.
Place one mozzarella ball after the basil on each skewer.
Set one olive half on top of each mozzarella ball to form the pupil of the eyeball.
Arrange the finished skewers on a platter and drizzle them evenly with olive oil.
Add a light drizzle of balsamic glaze over the skewers.
Sprinkle salt and pepper across the top before serving.
Assemble the skewers up to two hours ahead and keep them covered in the fridge so the mozzarella stays firm. If you need a dairy-free version, swap the mozzarella for small cucumber rounds, though the creamy texture will change. Skip extra toppings that would cover the olive pupils if you want the eyeball effect to stay clear.
