Servings 4 people

Equipment

  • Mixing Bowl
  • Whisk
  • Small Cake Pan
  • Oven

Ingredients

  • ¾ cup all-purpose flour
  • ½ cup granulated sugar
  • 1½ tablespoons matcha green tea powder
  • ¾ teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ cup unsalted butter, softened
  • 1 large egg
  • ⅓ cup milk
  • ½ teaspoon vanilla extract
  • ½ cup powdered sugar
  • 1 tablespoon unsalted butter, softened
  • 1 teaspoon matcha green tea powder
  • Candy eyes for garnish

Instructions

  • Preheat the oven to 350°F and line a small loaf pan or 6-inch round pan with parchment paper.
  • In a mixing bowl, whisk together the flour, granulated sugar, 1½ tablespoons matcha powder, baking powder, and salt until evenly combined.
  • Add the ¼ cup softened butter, egg, milk, and vanilla extract to the dry mixture. Stir until a smooth batter forms with no large lumps.
  • Pour the batter into the prepared pan and smooth the top. Bake for 22-25 minutes until a toothpick inserted in the center comes out clean.
  • Cool the cake completely in the pan before removing it.
  • In a small bowl, beat together the powdered sugar, 1 tablespoon softened butter, and 1 teaspoon matcha powder until a thick frosting forms. Spread the frosting over the cooled cake.
  • Press candy eyes onto the frosting to finish.

Notes

Use room-temperature ingredients to avoid a dense texture in the cake. If the frosting feels too thick, add a drop of milk at a time until it spreads easily. Store leftovers in an airtight container in the fridge for up to two days, and let slices sit out for a few minutes before serving so the frosting softens.
