Mummy Banana Bread Pudding
Course Dessert
Cuisine American
Servings 4 people

Equipment

  • Mixing Bowl
  • Baking Dish
  • Oven
  • Whisk

Ingredients

  • 4 cups cubed day-old banana bread
  • 2 ripe bananas, mashed
  • 1 1/2 cups milk
  • 2 large eggs
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup white chocolate chips
  • 8 candy eyes

Instructions

  • Preheat the oven to 350°F and lightly grease a medium baking dish.
  • Place the cubed banana bread in the prepared dish and scatter the mashed bananas over the top.
  • In a mixing bowl, whisk together the milk, eggs, sugar, vanilla, and cinnamon until smooth.
  • Pour the custard mixture evenly over the bread and bananas, pressing down gently so the bread absorbs the liquid.
  • Bake for 30 to 35 minutes until the center is set and the top is lightly golden.
  • Melt the white chocolate chips in the microwave in 20-second bursts, stirring between each until smooth.
  • Drizzle the melted white chocolate over the cooled pudding in thin strips to resemble mummy bandages, then press the candy eyes into place.

Notes

Let the pudding cool for at least 10 minutes before adding the white chocolate so the strips hold their shape. If you want a stronger banana flavor, use banana bread that already contains nuts or chocolate chips. Leftovers keep well in the fridge for two days and reheat nicely in the microwave for 20 seconds.
