One-Pot Turkey Bolognese with Zucchini Noodles

Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (15 ounces) tomato sauce
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 medium zucchinis, spiralized
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the ground turkey, onion, and garlic. Cook for 6 to 8 minutes, breaking up the turkey until it is browned and the onion softens.
  • Stir in the tomato sauce, oregano, salt, and black pepper. Let the mixture simmer for 5 minutes so the flavors blend.
  • Add the spiralized zucchini noodles to the pot. Cook for 3 to 4 minutes, stirring gently, until the noodles are just tender.
  • Remove the pot from the heat. Sprinkle the Parmesan cheese and fresh parsley over the top before serving.

Notes

Spiralize the zucchini right before cooking so it does not release too much water. If you prefer a thicker sauce, let the tomato mixture simmer an extra minute or two before adding the noodles. Leftovers keep well in the fridge for two days and reheat gently on the stove with a splash of water to loosen the sauce.
