Prosciutto-Wrapped Asparagus with Lemon Zest

- 12 fresh asparagus spears, trimmed
- 6 slices prosciutto
- 1 tablespoon olive oil
- Zest of 1 lemon
- Salt and black pepper to taste
Preheat the oven to 400°F and line a baking sheet with parchment paper.
Lay two asparagus spears on one end of a prosciutto slice and roll the slice around them to create a bundle. Repeat with the remaining spears and prosciutto.
Arrange the bundles on the prepared baking sheet. Drizzle the olive oil over the top and season lightly with salt and black pepper.
Roast for 10 to 12 minutes, until the asparagus is tender but still holds its shape and the prosciutto edges are slightly crisp.
Remove the baking sheet from the oven and sprinkle the lemon zest evenly over the bundles just before serving.
Add the lemon zest right before the bundles go on the table so the citrus aroma stays bright. If you need to prepare them ahead, wrap and roast the bundles earlier in the day, then warm them for a few minutes at 350°F and finish with the zest. Skip extra seasonings that could overpower the prosciutto and lemon.
