Pumpkin Patch Turkey Sliders on Sweet Potato Buns
Course Main Course
Cuisine American
Servings 4 people

Equipment

  • Mixing Bowl
  • Skillet
  • Baking Sheet

Ingredients

  • 1 pound ground turkey
  • 1/2 cup pumpkin puree
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 medium sweet potatoes, sliced into 8 rounds
  • 1 tablespoon olive oil
  • 4 slices American cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  • Preheat the oven to 400 degrees. Place the sweet potato rounds on a baking sheet and brush both sides with olive oil. Bake for 15 minutes until tender.
  • While the sweet potatoes bake, combine the ground turkey, pumpkin puree, thyme, salt, and black pepper in a bowl. Mix well and shape into 4 patties.
  • Heat a skillet over medium heat. Cook the patties for 5 minutes per side until fully cooked through.
  • Place one cooked sweet potato round on each plate. Add a turkey patty and top with a slice of cheese. Finish with a second sweet potato round.
  • Sprinkle chopped parsley over the assembled sliders before serving.

Notes

Use the parsley to add a few green stems around the sliders on the plate so they look like a small pumpkin patch. If the sweet potato rounds feel too soft after baking, let them cool for a minute before assembling so they hold their shape better. Leftovers reheat well in a 350 degree oven for 8 minutes.
