Pumpkin Patch Yogurt Parfaits
Course Breakfast
Cuisine American
Mixing Bowl
Spoon
4 Glasses or Jars
- 2 cups vanilla Greek yogurt
- ½ cup pumpkin puree
- 1 teaspoon pumpkin pie spice
- 2 tablespoons maple syrup
- 1 cup granola
- 12 pumpkin-shaped candies
Add the vanilla Greek yogurt, pumpkin puree, pumpkin pie spice, and maple syrup to a mixing bowl. Stir until the mixture is smooth and evenly colored.
Spoon about two tablespoons of the pumpkin yogurt into the bottom of each of four glasses or jars.
Add a layer of granola on top of the yogurt in each glass, using roughly two tablespoons per serving.
Repeat the layers once more so each parfait has two layers of yogurt and two layers of granola.
Place three pumpkin-shaped candies on top of each parfait right before serving.
Mix the yogurt base the night before and keep it covered in the fridge so assembly takes only a minute in the morning. Swap the maple syrup for honey if that is what you have on hand. Use plain granola without dried fruit to keep the orange color bright and the candy pumpkins easy to see.
