Red and Green Antipasto Skewers

- 12 wooden skewers
- 24 thin slices salami
- 12 fresh mozzarella balls
- 12 cherry tomatoes
- 12 pitted green olives
- 12 fresh basil leaves
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and black pepper to taste
Lay out all the skewers on a clean work surface. Fold each salami slice in half and thread two slices onto each skewer, leaving space between them.
Add one mozzarella ball to each skewer after the salami.
Thread one cherry tomato onto each skewer next.
Add one green olive and one basil leaf to finish each skewer.
Arrange the completed skewers on a serving platter.
Drizzle the olive oil and balsamic vinegar evenly over the skewers.
Sprinkle with salt and black pepper just before serving.
Thread the basil leaf right before the olive so it stays flat and visible. These skewers can be assembled up to four hours ahead and kept covered in the refrigerator. If you need more red color, use a few extra cherry tomatoes per skewer instead of adding other ingredients.
