Red Velvet Halloween Rice Krispie Bars

- 3 tablespoons unsalted butter
- 4 cups mini marshmallows
- 1 tablespoon unsweetened cocoa powder
- 1 teaspoon red gel food coloring
- 3 cups Rice Krispies cereal
- 4 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 2 tablespoons Halloween sprinkles
Melt the butter in a large saucepan over low heat. Add the mini marshmallows and stir until fully melted and smooth.
Stir in the cocoa powder and red gel food coloring until the mixture turns an even red color with no streaks.
Remove the pan from heat and fold in the Rice Krispies cereal until every piece is coated.
Press the mixture firmly into an 8x8 inch pan lined with parchment paper. Let it cool for 15 minutes.
In a mixing bowl, beat the softened cream cheese and powdered sugar together until smooth.
Spread the cream cheese mixture over the cooled bars. Scatter the Halloween sprinkles on top before slicing into four pieces.
Press the warm cereal mixture firmly so the bars hold their shape after cooling. If the cream cheese topping feels too thick, add a teaspoon of milk to loosen it. Store leftovers in an airtight container in the fridge for up to two days to keep the topping fresh.
