Cocktail glasses
- 2 medium beets, roasted, peeled, and chopped
- 1 cup fresh orange juice
- 8 ounces silver tequila
- 1/4 cup agave syrup
- 2 limes, juiced
- Ice
- Orange wedges, for garnish
Place the roasted beets and fresh orange juice in a blender. Blend on high until the mixture is completely smooth.
Pour the blended mixture through a fine-mesh strainer into a pitcher. Press gently on the solids to extract as much liquid as possible, then discard the pulp.
Add the silver tequila, agave syrup, and lime juice to the pitcher. Stir until the agave syrup fully dissolves and everything is combined.
Fill four glasses with ice. Divide the cocktail evenly among the glasses.
Add an orange wedge to the rim of each glass before serving.
Roast the beets the day before and chill them to speed up prep on the day of serving. If the drink tastes too earthy for your group, add an extra tablespoon of agave syrup and stir again. Skip the ice in the pitcher itself so the color stays bright until poured.
