Roasted Cauliflower and Chickpea Bowls with Tahini

Ingredients
  

  • 1 large head cauliflower, cut into florets
  • 2 (15 oz) cans chickpeas, drained and rinsed
  • 3 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/4 cup tahini
  • Juice of 1 lemon
  • 2-3 tablespoons water
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup pomegranate seeds

Instructions
 

  • Preheat the oven to 425°F. In a large bowl, toss the cauliflower florets and chickpeas with the olive oil, smoked paprika, cumin, garlic powder, salt, and pepper until evenly coated.
  • Spread the mixture in a single layer on a large baking sheet. Roast for 25 to 30 minutes, stirring once halfway through, until the cauliflower edges turn golden and the chickpeas crisp slightly.
  • While the vegetables roast, stir the tahini and lemon juice together in a small bowl. Add water one tablespoon at a time until the sauce reaches a pourable consistency.
  • Divide the roasted cauliflower and chickpeas among four bowls. Drizzle each bowl with the tahini sauce, then top with chopped parsley and pomegranate seeds before serving.

Notes

For the best texture, make sure the cauliflower and chickpeas sit in one layer on the baking sheet so they roast instead of steam. The pomegranate seeds add a juicy pop that pairs well with the earthy spices; if you need a substitute, a few chopped dried cranberries work in a pinch. Leftovers keep in the fridge for two days and reheat nicely in a skillet over medium heat to restore crispness.
