Rustic Beef Stew with Mixed Dried Herbs

Ingredients
  

  • 1.5 pounds beef stew meat
  • 4 medium potatoes, cubed
  • 4 carrots, sliced
  • 1 large onion, diced
  • 4 cups beef broth
  • 1 (14.5 oz) can diced tomatoes
  • 2 teaspoons mixed dried herbs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Add the beef stew meat to the slow cooker.
  • Place the cubed potatoes, sliced carrots, and diced onion on top of the meat.
  • Pour the beef broth and the can of diced tomatoes over the vegetables.
  • Sprinkle the mixed dried herbs, salt, and black pepper into the pot.
  • Stir everything gently to combine the ingredients evenly.
  • Cover the slow cooker and cook on low for 8 hours until the beef is tender and the vegetables are soft.

Notes

Mashing a few potato pieces at the end of cooking helps thicken the broth naturally without extra ingredients. The dried herbs work best when added at the start so their flavor has time to infuse the entire stew.
