Equipment

  • Baking sheet
  • Rolling pin
  • Mixing bowl

Ingredients

  • 1 pound pizza dough
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt to taste
  • Fresh rosemary sprigs for garnish

Instructions

  • Preheat the oven to 450°F and line a baking sheet with parchment paper. Divide the pizza dough into eight equal pieces.
  • Roll each piece into a short log about 6 inches long, then pinch the ends to create bone shapes with thicker knobs.
  • Arrange the shaped dough pieces on the prepared baking sheet. Stir together the olive oil and minced garlic, then brush the mixture evenly over all the dough bones.
  • Sprinkle the mozzarella cheese and Parmesan cheese across the top of each bone.
  • Scatter the dried oregano, dried basil, and a pinch of salt over the cheese.
  • Bake for 12 to 15 minutes until the edges are golden and the cheese has melted and started to brown.
  • Remove from the oven and tuck small rosemary sprigs into the cheese while the pizza is still hot.

Notes

Shape the dough bones a little thicker at the ends so they hold their form after baking. If the cheese browns too fast, tent the sheet loosely with foil for the last few minutes. Any leftovers can be reheated on a wire rack in a 350°F oven to restore crisp edges without making the cheese soggy.
