Heat the olive oil in a large skillet over medium heat. Add the lamb pieces and brown them on all sides, about 5 minutes total. Transfer the lamb to the slow cooker.
In the same skillet, cook the onion and garlic for 3 minutes until softened. Add the cumin, cinnamon, ginger, turmeric, salt, and pepper. Stir for 30 seconds, then pour in the beef broth and scrape the bottom of the skillet.
Add the carrots, chickpeas, and apricots to the slow cooker. Pour the broth mixture over everything and stir to combine.
Cover and cook on low for 7 hours or high for 4 hours until the lamb is fork-tender. Stir once halfway through if possible.
Serve the stew in bowls topped with fresh cilantro and a squeeze of lemon.
