Slow Cooker BBQ Beef Brisket Sandwiches

Ingredients
  

  • 2 pounds beef brisket, trimmed
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 1/2 cup beef broth
  • 1 cup barbecue sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 sandwich buns

Instructions
 

  • Place the sliced onion and minced garlic in the bottom of the slow cooker.
  • Rub the brisket with smoked paprika, salt, and pepper, then set it on top of the onions.
  • Pour the beef broth around the meat.
  • Cover and cook on low for 8 hours until the brisket is fork-tender.
  • Remove the brisket to a cutting board and shred it with two forks.
  • Return the shredded beef to the slow cooker and stir in the barbecue sauce until evenly coated.
  • Spoon the beef mixture onto the sandwich buns and serve.

Notes

Shred the beef while it is still hot so it absorbs the sauce quickly. If the mixture seems dry after shredding, add a splash of the cooking liquid before stirring in the barbecue sauce. Leftovers keep well in the fridge for two days and reheat nicely in a skillet with a little extra sauce.
