Slow Cooker Beef Stroganoff with Wide Egg Noodles

Ingredients
  

  • 1.5 pounds beef stew meat
  • 8 ounces mushrooms, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup sour cream
  • 12 ounces wide egg noodles
  • Chopped fresh parsley for serving

Instructions
 

  • Add the beef stew meat, sliced mushrooms, chopped onion, and minced garlic to the slow cooker.
  • Pour in the beef broth and Worcestershire sauce. Sprinkle with paprika, salt, and black pepper. Stir to combine.
  • Cover and cook on low for 7 to 8 hours until the beef is tender.
  • Stir in the sour cream until the sauce is smooth.
  • Cook the wide egg noodles in a large pot of boiling water according to package directions. Drain well.
  • Spoon the noodles into bowls and top with the beef mixture. Sprinkle with chopped fresh parsley before serving.

Notes

Stir the sour cream in only after the beef finishes cooking to prevent curdling. Cook the noodles right before serving so they stay firm under the sauce. Leftovers reheat well with a splash of broth to loosen the gravy.
