Cover and cook on low for 6 to 7 hours until the chicken reaches an internal temperature of 165°F.
Remove the chicken to a cutting board and shred it with two forks. Return the shredded chicken to the slow cooker and stir to mix it with the sauce and vegetables.
Spoon the chicken mixture over the cooked brown rice in individual bowls.
Top each bowl with avocado slices, shredded cheddar cheese, fresh cilantro, and a squeeze of lime.
