Course Main Course
Cuisine Asian
Servings 4 people

Equipment

  • Slow Cooker
  • Knife
  • Measuring Cups

Ingredients

  • 1.5 pounds pork tenderloin
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons fresh ginger, grated
  • 3 garlic cloves, minced
  • 1/2 cup chicken broth
  • 1 tablespoon sesame oil
  • 1 cup snow peas, trimmed
  • 2 green onions, sliced

Instructions

  • Place the pork tenderloin in the slow cooker.
  • In a small bowl, stir together the soy sauce, grated ginger, minced garlic, chicken broth, and sesame oil. Pour the mixture over the pork.
  • Cover and cook on low for 6 hours until the pork is tender.
  • In the last 30 minutes, add the trimmed snow peas to the slow cooker and stir gently to coat them in the sauce.
  • Remove the pork, slice it, and return the slices to the slow cooker to warm through.
  • Sprinkle with sliced green onions before serving.

Notes

Add the snow peas only toward the end so they keep their color and crunch instead of turning soft. If the sauce seems thin, remove the pork and let the liquid reduce uncovered for a few minutes before slicing and returning it to the pot. Leftovers reheat well on the stovetop over low heat with a splash of broth to loosen the sauce.
