Slow Cooker Honey Garlic Chicken Breast Bowls with Broccoli

Ingredients
  

  • 4 boneless, skinless chicken breasts (about 2 pounds total)
  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce
  • 4 garlic cloves, minced
  • 1/2 cup chicken broth
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 4 cups broccoli florets
  • 2 cups cooked rice, for serving
  • 2 green onions, sliced
  • 1 teaspoon sesame seeds

Instructions
 

  • Place the chicken breasts in the bottom of the slow cooker in a single layer.
  • In a bowl, stir together the honey, soy sauce, minced garlic, and chicken broth until the honey dissolves.
  • Pour the sauce over the chicken. Cover and cook on low for 4 hours.
  • After 4 hours, pour in the cornstarch slurry and stir gently around the chicken.
  • Add the broccoli florets on top of the chicken. Cover and cook for 30 more minutes until the broccoli is tender but still bright green.
  • Remove the chicken, slice or shred it, and return it to the sauce. Stir to coat.
  • Spoon the chicken, broccoli, and sauce over the cooked rice. Top with sliced green onions and sesame seeds.

Notes

Add the broccoli only in the final 30 minutes so it does not turn mushy. If the sauce seems thin after cooking, remove the lid for the last 10 minutes to let it thicken slightly. Leftovers keep well in the fridge for three days and reheat gently on the stove with a splash of broth to loosen the sauce.
