Slow Cooker Honey Garlic Chicken Thighs with Rice

Ingredients
  

  • 8 boneless skinless chicken thighs
  • ½ cup honey
  • ¼ cup soy sauce
  • 5 garlic cloves, minced
  • ½ teaspoon salt
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • Sliced green onions for serving

Instructions
 

  • Place the chicken thighs in the slow cooker. Add the honey, soy sauce, minced garlic, and salt. Stir to coat the chicken evenly.
  • Cover and cook on low for 6 hours or high for 3 hours until the chicken is tender.
  • About 20 minutes before the chicken is done, combine the rice and chicken broth in a medium saucepan. Bring to a boil, then reduce to low, cover, and simmer for 15 minutes until the rice absorbs the liquid.
  • Fluff the rice with a fork. Serve the chicken and sauce over the rice and top with sliced green onions.

Notes

Cook the rice in chicken broth instead of water to add extra flavor that matches the sauce. Leftovers reheat well in the microwave with a splash of broth to loosen the sauce. If you prefer a thicker sauce, remove the chicken at the end and simmer the liquid on the stove for a few minutes before serving.
