Slow Cooker Honey Garlic Chicken Thighs with Steamed Broccoli

Ingredients
  

  • 8 boneless, skinless chicken thighs (about 2 pounds)
  • 1/2 cup honey
  • 1/3 cup soy sauce
  • 4 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground ginger
  • 4 cups fresh broccoli florets
  • Salt and black pepper to taste

Instructions
 

  • In a mixing bowl, stir together the honey, soy sauce, minced garlic, olive oil, ground ginger, salt, and black pepper until the mixture is smooth.
  • Place the chicken thighs in the slow cooker and pour the honey garlic mixture evenly over them.
  • Cover and cook on low for 6 hours or on high for 3 to 4 hours until the chicken is tender and cooked through.
  • About 10 minutes before the chicken is done, bring a pot of water to a boil and add the broccoli florets to a steamer basket. Steam for 5 to 7 minutes until the broccoli is bright green and tender but still firm.
  • Serve the chicken thighs with the sauce from the slow cooker alongside the steamed broccoli.

Notes

If the sauce seems thin at the end of cooking, remove the chicken and let the liquid reduce for a few minutes in a small pan on the stove before spooning it over the meat. Steam the broccoli just before serving so it does not lose its color or crunch. Leftovers keep well in the fridge for up to three days and reheat gently in the microwave with a splash of water to loosen the sauce.
