Slow Cooker Peach Cobbler Oatmeal

Ingredients
  

  • 1 cup steel-cut oats
  • 4 cups unsweetened almond milk
  • 2 cups sliced peaches (fresh or frozen)
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans

Instructions
 

  • Place the steel-cut oats, almond milk, sliced peaches, brown sugar, cinnamon, vanilla extract, and salt directly into the slow cooker.
  • Stir everything together until the brown sugar and spices are evenly distributed.
  • Cover the slow cooker and cook on low for 6 to 8 hours, until the oats are soft and the peaches have released their juices.
  • Stir the oatmeal once more before serving, then divide into bowls and top each portion with chopped pecans.

Notes

Frozen peaches work especially well here because they release extra liquid during the long cook, keeping the oatmeal creamy. If you prefer a less sweet version, reduce the brown sugar to 2 tablespoons and let everyone add more at the table. Leftovers reheat nicely with a splash of almond milk to loosen the texture.
