Slow Cooker Pork and Apple Stuffing Casserole

Ingredients
  

  • 1 1/2 pounds boneless pork shoulder, cut into 1-inch pieces
  • 2 large apples, peeled and thinly sliced
  • 1 medium onion, diced
  • 2 stalks celery, chopped
  • 3 cups herb stuffing mix
  • 1 1/2 cups chicken broth
  • 1 teaspoon dried sage
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter, melted

Instructions
 

  • Place the pork pieces evenly in the bottom of the slow cooker.
  • Layer the sliced apples, diced onion, and chopped celery over the pork.
  • In a mixing bowl, combine the stuffing mix, chicken broth, dried sage, salt, black pepper, and melted butter until the stuffing is moistened.
  • Spread the stuffing mixture over the top of the apples and vegetables.
  • Cover and cook on low for 6 to 8 hours, until the pork is fork-tender and the stuffing has absorbed the flavors.

Notes

The apples release enough moisture to keep the stuffing from drying out, so check once near the end of cooking and add a small splash of broth only if it looks too firm. Leftovers store well in the fridge for up to three days and reheat best with a little extra broth stirred in to restore moisture.
