Slow Cooker Sausage, Kale, and White Bean Casserole

Ingredients
  

  • 1 pound Italian sausage, sliced into rounds
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 (15-ounce) cans white beans, drained and rinsed
  • 1 bunch kale, stems removed and leaves chopped
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • Grated Parmesan cheese, for serving

Instructions
 

  • Place a skillet over medium heat and add the sausage slices. Cook until lightly browned on both sides, then transfer the sausage to the slow cooker.
  • Add the onion and garlic to the same skillet. Cook for 3 to 4 minutes until the onion softens, then scrape everything into the slow cooker.
  • Add the white beans, kale, chicken broth, thyme, salt, and pepper to the slow cooker. Stir to combine all ingredients.
  • Cover and cook on low for 6 hours.
  • Stir the casserole once more before serving. Spoon into bowls and top each portion with grated Parmesan cheese.

Notes

Use a full bunch of kale because it cooks down significantly during the long simmer. If you prefer a thicker result, mash a few beans against the side of the pot before serving. Leftovers reheat well in a covered pot on the stove with a splash of broth to loosen the mixture.
