Slow Cooker Sausage, Kale, and White Bean Casserole

- 1 pound Italian sausage, sliced into rounds
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 (15-ounce) cans white beans, drained and rinsed
- 1 bunch kale, stems removed and leaves chopped
- 1 cup chicken broth
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- Grated Parmesan cheese, for serving
Place a skillet over medium heat and add the sausage slices. Cook until lightly browned on both sides, then transfer the sausage to the slow cooker.
Add the onion and garlic to the same skillet. Cook for 3 to 4 minutes until the onion softens, then scrape everything into the slow cooker.
Add the white beans, kale, chicken broth, thyme, salt, and pepper to the slow cooker. Stir to combine all ingredients.
Cover and cook on low for 6 hours.
Stir the casserole once more before serving. Spoon into bowls and top each portion with grated Parmesan cheese.
Use a full bunch of kale because it cooks down significantly during the long simmer. If you prefer a thicker result, mash a few beans against the side of the pot before serving. Leftovers reheat well in a covered pot on the stove with a splash of broth to loosen the mixture.
