Slow Cooker Sausage, Peppers, and Onions over Polenta

Ingredients
  

  • 1 pound Italian sausages
  • 3 bell peppers, sliced
  • 2 large onions, sliced
  • 4 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chicken broth
  • 1 cup polenta
  • 4 cups water
  • 2 tablespoons butter
  • 1/2 cup grated Parmesan cheese

Instructions
 

  • Place the Italian sausages, sliced bell peppers, sliced onions, minced garlic, dried oregano, salt, black pepper, and chicken broth into the slow cooker.
  • Cover and cook on low for 6 to 7 hours until the sausages are cooked through and the vegetables are soft.
  • About 20 minutes before serving, bring the water to a boil in a medium saucepan. Slowly whisk in the polenta.
  • Reduce the heat to low and cook the polenta for 15 minutes, stirring often, until it thickens.
  • Stir the butter and grated Parmesan cheese into the polenta until fully combined.
  • Slice the cooked sausages and spoon them with the peppers and onions over servings of polenta.

Notes

Slice the peppers and onions to similar widths so they cook evenly in the slow cooker. If the polenta thickens too much while sitting, stir in a splash of warm water to loosen it before plating. Leftovers reheat well in the microwave with a little extra broth stirred into the sausage mixture.
