Slow Cooker Spicy Cajun Beef Stew with Okra

Ingredients
  

  • 1.5 pounds beef stew meat
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 can (14 ounces) diced tomatoes
  • 4 cups beef broth
  • 2 medium potatoes, cubed
  • 2 cups sliced okra
  • 1/2 teaspoon cayenne pepper

Instructions
 

  • Place the stew meat in the slow cooker and sprinkle it with Cajun seasoning, salt, and black pepper. Toss to coat the pieces evenly.
  • Add the diced onion, green bell pepper, celery, and minced garlic on top of the meat.
  • Pour in the diced tomatoes and beef broth.
  • Add the cubed potatoes, sliced okra, and cayenne pepper.
  • Stir everything once to combine, then cover and cook on low for 8 hours until the beef is tender and the potatoes are soft.
  • Taste and adjust salt or cayenne if needed before serving.

Notes

Add the okra at the start so it breaks down and thickens the broth naturally. For milder heat, reduce the cayenne to a pinch or skip it. Leftovers keep well in the fridge for three days and reheat smoothly on the stovetop with a splash of broth to loosen the texture.
