Slow Cooker Thai Basil Beef with Jasmine Rice
Course Main Course
Cuisine Asian
Servings 4 people

Equipment

  • Slow Cooker
  • Skillet

Ingredients

  • 1 pound lean ground beef
  • 1 small onion, finely chopped
  • 4 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon crushed red pepper flakes
  • 1 cup fresh Thai basil leaves, torn
  • 3 cups cooked jasmine rice, for serving

Instructions

  • Place the ground beef, onion, and garlic in a skillet over medium heat. Cook until the beef is browned and the onion softens, then drain any excess fat.
  • Transfer the beef mixture to the slow cooker. Add the soy sauce, fish sauce, brown sugar, and red pepper flakes. Stir everything together until well combined.
  • Cover and cook on low for 4 to 5 hours.
  • Turn off the heat and stir in the torn Thai basil leaves until they wilt slightly.
  • Spoon the beef over bowls of cooked jasmine rice and serve right away.

Notes

Stir the basil in only after cooking so it stays green and fragrant rather than turning dark. If the sauce seems too thick, add a splash of water during the last hour. Leftovers reheat well the next day with a little extra soy sauce to refresh the flavors.
