Slow Cooker Turkey, Stuffing, and Green Bean Casserole

- 1 pound ground turkey
- 1 medium onion, diced
- 2 celery stalks, diced
- 2 cups fresh green beans, trimmed and cut into 1-inch pieces
- 1 can (10.5 oz) cream of mushroom soup
- 1 1/2 cups chicken broth
- 3 cups dry stuffing mix
- 1 teaspoon poultry seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Place the ground turkey, diced onion, and diced celery in a large skillet over medium heat. Cook until the turkey is browned and the vegetables have softened.
Transfer the turkey mixture to the slow cooker. Add the green beans, cream of mushroom soup, chicken broth, poultry seasoning, salt, and black pepper. Stir until everything is evenly combined.
Cover and cook on low for 5 hours.
Stir in the dry stuffing mix during the final 30 minutes of cooking. Replace the lid and continue cooking until the stuffing has absorbed some liquid and softened.
Stir the stuffing in late so it stays slightly textured instead of turning mushy. Leftovers reheat well in the microwave with a splash of broth to loosen the mixture. If the green beans are very thick, cut them smaller before adding so they cook through evenly.
