Smoky BBQ Beef and Baked Bean Bowls

Ingredients
  

  • 1 pound ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cans (15 ounces each) baked beans, drained slightly
  • 3/4 cup barbecue sauce
  • 1 tablespoon smoked paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooked rice, for serving
  • 1 cup shredded cheddar cheese, for serving
  • 2 green onions, sliced, for serving

Instructions
 

  • Brown the ground beef in a large skillet over medium heat, breaking it up as it cooks. Add the diced onion and minced garlic and cook until the onion softens.
  • Transfer the beef mixture to the slow cooker. Stir in the baked beans, barbecue sauce, smoked paprika, chili powder, salt, and black pepper until evenly combined.
  • Cover and cook on low for 6 hours or on high for 3 hours, stirring once halfway through if possible.
  • Spoon the beef and bean mixture over cooked rice in bowls. Top each serving with shredded cheddar cheese and sliced green onions.

Notes

If the mixture thickens too much during cooking, stir in a splash of water or extra barbecue sauce right before serving. Leftovers reheat well in the microwave with a damp paper towel over the bowl to keep the beans from drying out. For a stronger smoky taste, add an extra half teaspoon of smoked paprika at the start.
