Heat the olive oil in a large pot over medium heat. Add the lamb cubes and brown them on all sides, about 6 to 8 minutes. Remove the lamb and set it aside.
Add the onion to the same pot and cook until it softens, about 5 minutes. Stir in the garlic, chipotle peppers, and cumin. Cook for 1 minute until fragrant.
Return the lamb to the pot. Pour in the Guinness and beef broth. Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 1 hour, stirring occasionally.
Add the black beans and corn. Season with salt and black pepper. Simmer uncovered for 15 more minutes until the stew thickens slightly.
Ladle the stew into bowls. Top with chopped cilantro and serve with lime wedges on the side.
