Smoky Fig and Thyme Gin Negroni
Course Drink
Cuisine Italian
Servings 4 people

Equipment

  • Mixing glass
  • Strainer
  • Small skillet
  • Rocks glasses

Ingredients

  • 8 ounces gin
  • 4 ounces Campari
  • 4 ounces sweet vermouth
  • 4 fresh figs, halved
  • 8 sprigs fresh thyme
  • Ice cubes

Instructions

  • Place a small skillet over medium heat and add four fig halves cut side down. Cook for two minutes until the edges char lightly. Remove and set aside.
  • In a mixing glass, lightly muddle the remaining four fig halves with four thyme sprigs to release juices and oils. Add the gin, Campari, and sweet vermouth.
  • Fill the mixing glass with ice and stir for 20 seconds until well chilled. Strain into four rocks glasses filled with fresh ice.
  • Garnish each glass with one charred fig half and one fresh thyme sprig. Lightly wave a lit match near the thyme sprig for a quick burst of smoke before serving.

Notes

Char the figs just until the edges darken to keep their shape and avoid bitterness. If fresh figs are unavailable, use two tablespoons of fig jam stirred into the mixing glass instead. Serve immediately while the smoke note is strongest.
