Spicy Harissa Beef Stew

Ingredients
  

  • 1 1/2 pounds beef stew meat
  • 3 tablespoons harissa paste
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 3 carrots, peeled and sliced
  • 2 medium potatoes, cubed
  • 1 (14 oz) can diced tomatoes
  • 4 cups beef broth
  • 1 teaspoon ground cumin
  • Salt and black pepper to taste
  • Fresh cilantro, for serving

Instructions
 

  • Add the beef stew meat to the slow cooker.
  • Stir in the harissa paste, chopped onion, minced garlic, sliced carrots, and cubed potatoes.
  • Pour in the diced tomatoes and beef broth.
  • Add the ground cumin along with salt and black pepper.
  • Cover and cook on low for 8 hours until the beef is tender.
  • Stir the stew before serving and top each bowl with fresh cilantro.

Notes

Taste the harissa before adding it so you can adjust the amount for your preferred spice level. If the stew thickens too much during cooking, stir in a splash of extra broth right before serving. Leftovers store well in the fridge for up to three days and reheat easily on the stove with a little added liquid.
