Spicy Mango Black Bean Salsa with Tortilla Chips

Ingredients
  

  • 2 large ripe mangoes, peeled and diced
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 small red bell pepper, diced
  • 1 jalapeño, minced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • Tortilla chips, for serving

Instructions
 

  • Add the diced mangoes, black beans, red bell pepper, and jalapeño to a mixing bowl.
  • Sprinkle in the chopped cilantro, lime juice, chili powder, and salt.
  • Stir gently until all ingredients are evenly combined.
  • Let the salsa rest for 5 minutes so the flavors can blend.
  • Transfer to a serving bowl and place tortilla chips alongside for dipping.

Notes

Make this salsa a few hours ahead so the lime and chili powder can mellow the jalapeño heat. If the mangoes are very ripe, dice them just before mixing to keep the pieces firm. For a milder version, remove the jalapeño seeds before mincing.
