Spinach and Ricotta Stuffed Shells

Ingredients
  

  • 12 jumbo pasta shells
  • 1 (15 oz) container ricotta cheese
  • 1 (10 oz) package frozen spinach, thawed and drained
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions
 

  • Bring a large pot of salted water to a boil and cook the jumbo pasta shells until just tender. Drain and set aside to cool slightly.
  • In a mixing bowl, combine the ricotta cheese, drained spinach, half the mozzarella, the Parmesan, egg, garlic powder, dried basil, salt, and pepper. Stir until evenly mixed.
  • Spread 1 cup of marinara sauce in the bottom of a baking dish. Spoon the ricotta mixture into each cooked shell and place them in the dish.
  • Pour the remaining marinara sauce over the stuffed shells and sprinkle with the rest of the mozzarella cheese.
  • Bake at 375°F for 25 minutes, or until the cheese is melted and the sauce is bubbling around the edges.

Notes

Thaw and squeeze the spinach well so the filling does not turn watery. You can assemble the dish the night before, cover it, and bake it just before serving. Leftovers reheat well in the microwave with a splash of extra sauce to keep the shells moist.
