Spooky Mini Pumpkin Spice Pancake Stack with Maple Syrup
Course Breakfast
Cuisine American
Servings 4 people

Equipment

  • Mixing Bowl
  • Nonstick Skillet
  • Whisk

Ingredients

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 tablespoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 1 cup pumpkin puree
  • 3/4 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • Maple syrup for serving

Instructions

  • Mix the flour, baking powder, pumpkin pie spice, and salt in a bowl. In a second bowl, whisk the pumpkin puree, milk, egg, and melted butter until smooth. Pour the wet mixture into the dry ingredients and stir gently until just combined. Do not overmix.
  • Heat a nonstick skillet over medium heat. Scoop small spoonfuls of batter to form 2-inch pancakes. Cook until bubbles form on top, then flip and cook the other side until lightly browned. Repeat with the remaining batter to make enough mini pancakes for four stacks of four pancakes each.
  • Place the pancakes in stacks on plates. Drizzle maple syrup over each stack before serving.

Notes

Use a small cookie scoop for even mini pancakes that cook quickly on one skillet. If the batter thickens while you work, add a splash of milk to loosen it. Leftovers keep in an airtight container in the fridge for two days and reheat well in a toaster.
